Sambar is an old recipe in South zone of India which present the culture in a bowl with delicious taste.
You will have it more if you try it once because it is a mixture of health and taste which will open up your taste buds and will tempt you to have more.
So here is the recipe below- (serves 3-4 person)
Ingredients-
1. Mustard seeds 1spn
2. Methi (Fenugreek) seeds 1 1/2 tspn
3. Saunf (fennel) 1 1/2 tspn
4. Dried red chillies 3-4
5. Tomatoes 2 finely chopped
6. Few curry leaves 8-10
7. Onion 2 finely chopped
8. Ladies finger 100 gm chopped in medium sizes or into half
9. Radish par boiled 100gm
10. Brinjal par boiled 200gm
11. Sambar powder 2-3 tbspn
12. Tamarind water 3 cups
13. Tamarind 20gm
14. Toor dal pre-prepared (boil the dal with salt untill 3-4 cooker whistles)
15. Salt 1 spn
16. Sugar 2-3 spn
17. Haldi powder 1 tspn
18. Hing a pinch
19. Water as required
20. Coriander

Method:-
• 1st put some oil in casserole and then add Mustard seeds,methi seeds,saunf, dried red chillies,curry leaves,hing.
• Afterr the tadka add onions and after turning the onions golden brown add tomatoes.
• Then add ladies finger then add haldi powder and salt as per taste after the ladies fingers are done.
• Add par-boiled radishes and brinjals.
• Fry them for 1 minute .
• Then add tamarind water and simmer it for 10-12 minutes.
• Add prepared dal and boil it with all for 5-6 minutes.
• Then add sambar powder 2-3 tbspa and then add sugar.
• And boil it for 10-12 minutes.
• Atlast add coriander leaves and serve hot.
The combination of toor dal and spices like coriander,cumin seeds, hing that enhances the taste as well as many health benefits.
As it is a combination of dal and vegetables it is a friendly recipe for health too. It is high in vitamin and minerals and antioxidants rich.
